GRILLED RABBIT WITH PESTO & GARDEN ASPARAGUS

Why eat rabbit meat?

Rabbit meat is high in protein and low in fat, making it a healthy addition to your diet. It’s extremely lean meat compared to conventional pork or beef.

GRILLED RABBIT WITH PESTO & GARDEN ASPARAGUS

INGREDIENTS

  • 4 pcs rabbit (belly portions, tenderize beforehand for optimal results)
  • 2 spears asparagus
  • 2 cups cooked Thai noodles
  • 3/8 cup Pesto
  • Salt & Pepper to taste
  • Bacon grease or butter (for cooking)

DIRECTIONS

  1. Asparagus – Turn your pan on medium heat. Grease with butter/bacon grease. Chop asparagus and place into a pot. Cover with water and boil for five minutes. Then drain and fry in the pan for two minutes, stirring frequently. Set aside and keep warm.
  2. Pesto – Heat the cooked noodles. Add pesto, stir and keep warm.
  3. Rabbit – Grease a pan with bacon grease/butter. Arrange the belly portions in the pan and cook over medium heat until brown and crispy on both sides. Internal temperature should be 165F. Season to taste with salt and pepper.
    Serve warm with the meat and asparagus as toppings on the pesto

NOTES

The rabbit is especially delicious if cooked on the grill. You can make your own pesto sauce, but to keep this recipe simple we didn’t include the additional recipe for pesto.
