Fry the eggs: Grease your pan with 1/2 tablespoon of butter. Crack the eggs into the pan and let them cook for 1-2 minutes on medium heat before turning. Once you’ve turned them you should be able to take them off after 30 seconds to a minute.
Cook the sprouts: Chop each brussel sprout in half. Grease your pan like you did before with the eggs, then place each sprout (cut side down) in the pan. Cook on medium heat for 2-4 minutes. Flip, and cook for another 1-3 minutes.
Assemble the plate: Cut the avocado into slices. Arrange on a plate next to the eggs & sprouts. Place the breadstick next to the avocado, and finally you can add the kimchi or sauerkraut. Serve warm!
