Homemade Apple Pie

Serving Size:
1 Pie
Time:
2 Hours
Difficulty:
Medium

Ingredients

  • 2 1/2 cups flour (we use whole wheat)
  • 1 1/2 cups cold butter, cubed (equivalent to 3 sticks)
  • 1/8 cup granulated sugar
  • Cold water
  • 4-5 medium apples, sliced
  • 2 tsp lemon juice
  • 1/8 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1 egg

Directions

  1. For the dough: Combine the first 3 ingredients in a food processor and blend until the mixture resembles breadcrumbs. Gradually add in water until a dough forms. Scoop it out, wrap in cling wrap and chill in the refrigerator while you work on the filling.
  2. For the filling: In a medium bowl, mix the sliced apples, lemon juice, brown sugar, and spices. Set aside.
  3. To assemble the pie: Take out the dough, and divide it into two pieces. One should be about twice the size of the other. Roll out the bigger ball into a circle shape (no thinner than 1/4 inch). Do the same for the other portion of dough.
  4. Arrange the bigger circle of dough in a pie tin. The center of the dough should be roughly aligned with the center of the tin and make sure the sides of the circle are flush with the sides of the pie tin. Then place the pie filling in the center of the dish, spreading out until evenly distributed.
  5. Place the smaller dough circle on the top. Seal the outer edge with the top portion of the other dough circle. Trim any excess dough.
  6. Whip the egg in a small bowl. Use a rubber brush to cover the top of the pie with it (some of the egg may not be used). Cut three slits on the top of the pie to let it vent while cooking.
  7. Bake at 375F for 45 minutes or until the top is a golden brown color. Serve warm with whipped cream & cinnamon.
